(to the tune of jimmy crack corn)
last night i had an epiphany. let me tell you this is one for the books.
after the girls went to bed, i cozied up next to my chopping board and oven and prepared a few meals for the week. i cooked for 2 glorious, uninterrupted hours. smartest thing i have ever done. it has been so long since i've had that kind of time when getting a dinner ready. not to mention, for the next few nights there isnt a slew of dishes in the sink to clean.
first up is Chicken Pot Pie
easy, delish recipe from the kitchn. I didnt have sherry or mushrooms so i omitted both and it still tasted delicious. also, used a store bought pie crust (i know i know, i suppose this makes me a cheater, but homey dont have that kind of time). cheat #2, used meat from a rotisserie chicken, one less pan to clean.
ps - adding a pie crust to anything makes it look impressive
next up was roasted vegetable enchiladas
no picture yet as they have not been cooked.
i chopped up all the veggies and threw them in the oven to roast while i was making the pot pie. then when i was done with the pot pie, the veggies were ready and i quickly layered them in a casserole dish with corn tortillas, cheese, enchilada sauce and a little leftover rotisserie chicken.
annnnnd then, roasted butternut squash...for a healthy snack/lunch/side dish option. diced up butternut squash, threw it on a baking pan with grapeseed oil, agave nectar, salt, paprika and cinnamon. really delish and made the house smell like christmas. threw this in the oven after the other vegetables were done roasting.
lastly, chili. browned and seasoned the meat and have it prepared to throw in the crockpot with a shmorgisborg of other ingredients (mostly canned) in the morning to cook throughout the day.
voila, dinner and leftovers that should sustain us for the next 5 days. now i just get home, turn on the oven and throw something into it.
less time for clean up and chaos, more time for wine drinking. yayyyyyyyyy
