kelly and i went to whole foods for lunch on monday, and after perusing the produce and a trip to the salad bar we were on our way to leave when my eyes caught something glorious in the pre made food section...kale with avocado dressing! it was amazing, as kelly put it "they margarita-fied kale!" haha. of course the single serving portion i purchased did not satisfy my craving so i decided to make some myself, and it really was so easy.
also, that same outing, i grabbed a serving of an herb chicken salad, which was equally as good. so fresh and herby. i also recreated this for dinner with the kale last night.
Herb Chicken Salad
Cherry Tomatoes - halved
Carrots - julienned
Red and Yellow Bell Pepper - julienned
Lemon Rind and juice of one lemon
lots of parsley
2 Chicken Breasts, seasoned with salt and pepper - grill until done and chop into pieces
salt and pepper to taste
thats really it, chop and mix everything in a bowl and let marinate for awhile. so good.
Kale with avocado dressing
Kale - rinsed, deveined, and chopped
Avocado (i used about 1 1/2)
Lime juice (i used about 3 limes)
salt to taste
mash your avocado in a bowl, add lime juice and a bit of salt to taste (use whatever ratio you prefer, if you want it creamier add more avocado or less lime). then toss in the kale.
since this was a pretty simple meal as far as kyle is concerned, i toasted a pita and stuffed it with both concoctions, which was actually really delicious. served it with quinoa zested up with lemon and parmesan.
